Spring has officially kicked off and what better way to enjoy this season with a light and delicious salad-without adding any weight to your body! I stumbled on the recipe on one of my favourite food blogs here and I had to try it! Although my pictures didn't turn out as stunning as Kate's I decided to use hers instead.
